The crucial factors, such as temperature stability and humidity, lighting control, ventilation and vibroacoustic insulation, have all been mastered. Their importance in storing prized wines is simple to demonstrate: eight years of aging at cellar temperature (12/13ºC) is equivalent to one year of aging at room temperature (22/23ºC).
